Have you ever wondered how Salamis are produced? How the balance of meat, fat and seasoning are matched perfectly to make something truly delicious?

In a brand new course, David Lishman will demonstrate the art of curing meat into Salami. The reasoning behind the use of nitrates and nitrites in food curing will be explained to you-along with the vital importance of adding these 'additives' to many of the cured foods we eat today.


You will then get hands on experience at making your own cured salamis, seasoned to your liking, and these will be held in our special salami maturing cabinet for a period of time until they are ready to eat.


Each person will take home salamis to the value of approximately £30.

 

This course is held in Ilkley, and your salamis will be hung, on show, in our new salami curing cabinet until they are ready for eating.
