Fur and Feathers

In this country we have a wonderful array of game, ranging from snipe to partridge, venison to hare. Often there is a bit of confusion on how they should be dressed and what the different game products taste like. If you go shooting or are often given a brace of pheasant then this is the course for you!

What you will learn:

• How to identify the different game birds
• View different game in fur and feather
• How to prepare your game bag
• What you can do with the game
• Different recipes and cooking options

What you can expect:

• A maximum of 8 people
• David Lishman will teach you how to prepare game for the oven or for further preparation
• Pate and sausage making
• How to pluck game birds and how to skin other animals
• The difference in the flavours of the various game birds and animals
• Fun, educational, light hearted afternoon

This is a hands on class, you will be required to either pluck or skin animals.

You will take home:

• Sausages and pate that you have made during the day
• A booklet of recipes and tips of how to prepare game

Starting time 12.30-1pm, finishing approximately 5.30pm
